The 10th colossus is the bull right? I think at first you wave the flaming stick front of it's face to get it to back off the cliff. Then you drop down to the lower ledge (you may take a little damage). But don't drop all the way to the ground, cause he'll wake up and rock you. You look down from the lower ledge, and hop on his back there. Then you have to shuffle around on his back a bit to get a good enough footing to actually stab the guy. If that's being too much of a pain, just lead him back up to where you first encountered him. He's easy to hop on up there, and he runs around less, allowing you to stab his back easier. Hope that helps. I also hope I'm talking about the right colossus.
