i suppose coming from a nobel background helped her move from RukonGai (the place where souls go to when the arrive in the soul society) to the Seretai (the place where all the soul reapers live) faster and go through the soul accademy when she became aware of her spiritual powers.
Most souls in Rukon Gai don't get hungry however those who are aware of their spiritual powers do feel hungry

her last name Surudoi relates to her past, she was from a really wealthy family (practically a princess) however both her parents mysteriously got fatal illnesses and died, her uncle who expected to be left with everything was devistated when he found that kanako inherited everything so he cleverly thought of a simple plan to be rid of her, he slipped a venomus snake in to her room one night in order to kill her which it did.
Her death also relates to the power of her zanpakuto
